Description About the position: This position is located at the Rocker Enlisted Club on Kadena Air Base, Okinawa, Japan.


The Chef reports directly to the Club Complex Manager and must meet assigned objectives with little or no supervision. Work is reviewed in terms of overall accomplishments of established goals and objectives. As Chef, assesses individual facility staff training needs and advises the Club Complex Manager or requirements and/or resources necessary to conduct this training. Responsible for providing the necessary training of kitchen, dining room and supervisory staff, in order to insure high quality standards are met and maintained via the preparation, production and presentation of dishes throughout various food service operations. Instructs and trains facility cooks onsite in the proper techniques of food preparation, cooking methodology, plate presentation and cost control procedures. Formulates policies in total quality food preparation and service, in conjunction with the Club Complex Manager and reports back on the status and viability of individual food service programs. Develops menu items utilizing skills and knowledge of culinary techniques and food chemistry and food chemistry, submits recommendations to the Club Complex Manager for review and implementation. Develops recipes for assigned menu items and directs staff in gathering recipe/menu information for maintenance of cost/recipe cards.

In order to qualify, you must meet the experience requirements described below. Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religious; spiritual; community; student; social). You will receive credit for all qualifying experience, including volunteer experience. Your resume must clearly describe your relevant experience; if qualifying based on education, your transcripts will be required as part of your application.

Qualifying Experience:
A graduate of the Culinary Institute of America or a comparable institution is highly desirable. A minimum of 3 years of managerial and technical experience at the Executive Chef level. Extensive knowledge and ability in to prepare and cook fresh, frozen, canned and dehydrated food products. Varied experience with cuisine from around the world. Applied knowledge in food cost control and procedures. Ability to write accurate recipes with clear step by step requirements. Knowledge of dietetics, planning culinary activities and portion control. Knowledge of applicable sanitation and safety
requirements. Experience in training kitchen staff and cooks in quality food preparation, efficient kitchen operations and responsible cost controls. Computer literate in all Microsoft applications.Some federal jobs allow you to substitute your education for the required experience in order to qualify. This position does not allow for education substitution in order to qualify.
